BERRY COLLAGEN CRUMBLE

A breakfast crumble that feels equal parts indulgent and intentional – comfort food with a skin-loving twist. Packed with antioxidant-rich fruit and boosted with marine collagen.

 

INGREDIENTS

300 g mixed berries (fresh or frozen)

1 tbsp maple syrup

1 tsp lemon zest

1 tsp lemon juice

 1 tsp arrowroot or cornstarch (optional, for thickening)

80 g oat flour

60 g almond flour

 2 tbsp Par Olive Marine Collagen Superpowder (Organic Coconut) 

2 tbsp coconut oil

 melted 2 tbsp maple syrup

pinch fine sea salt

2 tbsp chopped almonds

 

 

METHOD

  1. Toss the berries with maple syrup, lemon zest, lemon juice and arrowroot or cornstarch and transfer to a small baking dish.
  2. In a bowl mix oat flour, almond flour, collagen, coconut oil, maple syrup, almonds and sea salt until crumbly.
  3. Sprinkle the crumble mixture over the berries and bake at 175°C for about 20–25 minutes until golden.
  4.  Serve warm with yoghurt and a drizzle of maple syrup.
